Our cake pop adventure







Cake pop is going popular now in many parties and as holiday treats.Because Little Optimus loves cake pop, I decided to make our own. We used Bella cake pop maker which my mom in law gifted it to me last Christmas. It comes in 6 holes and its so easy to use. It comes with a recipe book to show many ways in making a cake pop using the cake pop maker. What i did here is that I just follow the the mixing instructions on Duncan Hines cake mix box and then after that , you fill up the holes and then bake it for 3 mins. While its baking you melt  the chocolate melts in the microwave for 30 seconds. Right after the cake pop is done ,stick the candy stick on the melted chocolate then stick it  on the cake pop. After that  you cool the cake pops in the fridge, while making the next batch. Remember you have to put  the cake pops in the fridge before you coat it with melted chocolate, so that it will set. When  the cake pops are already cooled off for atleast 30 mins. its about time to
 coat it with melted chocolates. In melting the chocolates for the coating for the cake pop i use a double boiler . For me it coats better  coz it maintains the smooth consistency of the melted chocolates. After that you can go creative ..you can add sprinkles , marshmallows, grahan cracker crumbs, nuts...use your imagination , be creative !


               In this case my son took charge on the design process. Isnt that beautiful ? It sure is !

Super Easy Parmesan Cheese sauce



Yesterday, I made this. Doesnt that look pretty and yummy?  Just by looking at this pictures makes me hungry, too bad theres no more left overs but in a good note, its a good sign coz that means my family loves it. I will have to double the recipe next time.The star of the show in this dish is the parmesan cheese sauce.It just have that right amount of creaminess and cheesiness. Its so easy like 123.In here, I use angel hair pasta ,bec. i love em.You can use any pasta you like.To cook it just follow the direction on the package :) easy enough!


Breaded Chicken

4 boneless skinless chicken breast cut into strips
1 cup italian bread crumbs
1 cup grated parmesan cheese
2 tbsp olive oil
salt and pepper

1. sprinkle salt and pepper on the chicken, on a separate plate mix the bread crumbs and the grated parmesan cheese together.
2.Bread the chicken with the parmesan and bread crumbs mixture.
3.Fry it with olive oil. about 3 mins on each side until it is crispy and golden brown.
4.When its done, put it on the side and cover it with aluminum foil to retain its heat.

Parmesan Cheese Sauce

4 tbsps butter
1/4 cup Wondra quick mixing flour or all purpose flour.I love the Wondra coz it gives more of a soft texture compared to all purpose flour.
3 cups milk
2 chicken bouillon cubes
1 cup grated parmesan cheese
salt and pepper to taste
1 tsp garlic powder

1. Put 4 tbsps of butter into a large sauce pan, and heat over medium until the butter is completely melted.Turn down the heat to medium low once the butter is melted.
2.Stir in 1/4 cup of flour into the butter a little bit at a time.Constantly stirring until it is well blended and has a smooth texture with no lumps.
3.Slowly stir in 3 cups of milk, plus the two bouillon chicken flavor.Simmer the sauce, stirring constantly to avoide scorching,until it begins to thicken
4. When the sauce is thick,sprinkle the parmesan cheese and stir until the cheese melts into the sauce.
pinch of salt and pepper to taste. and add the the garlic powder as well.

To prepare :

Pour in the sauce over the cooked pasta.Arrange breaded chicken  strips on top, Pour in the sauce.Garnish it with parsley flakes and shredded parmesan cheese. ( just like the photo on top )

Cook with me: Lo Mein







Pancit ( Lo Mein) is a famous dish in the Philippines. When i was still living there my mom used to make them almost every Sunday or special occasions.This is one of my family's favorite dish specially Lucas.Everytime i make one he get seconds.This recipe is a combination of asian noodles, veggies , meat and you stir fry them.Its so easy to make.But first, you gotta have a wok. It cooks the food evenly, the meat is tender and the veggies are crispy. The noodles i used in this recipe are the ones i bought from the Filipino Store.But you can also get them in the asian aisle of your local supermarket.The egg noodles (yellow) and vermecelli ( thin and transparent ).The difference between them is that the one from the supermarket is that you cook them separately in a pot like cooking a pasta.The ones from the filipino store is that they only need little water and they absorb quick too.. you can just trow them together with your stir fry mix in a wok and your done.

Ingredients :

2 boneless skinless sliced chicken breast ( you can use beef,pork,shrimp or even combine all of them )
2 tbsps. olive oil
1 small onion dice
2 tbsps. minced garlic
2 medium carrots peeled and sliced thinly
2 cupz thinly sliced cabbage ( you can substitute it with celery )
4 sliced mini bella mushrooms
1 red bell pepper sliced
1 cup chicken broth
half pack of DRIED EGG NOODLES
1 bunch of RICE STICK comes in 4 in a pack. The bunch you gonna make put them in a casserole dish and let it soak in a half cup of water.
2 tbsps. MAGGI SEASONING SOY SAUCE ( you can substitute it with Kikkoman soy sauce but i love this one because it has that authentic flavor )
2 tbsps. butter

Lets rock and roll the wok!

1. Heat the oil in a wok and saute the onions until transparent for 2 mins.Add garlic and saute until fragrant for 30 seconds.Add the chicken and saute until until browned for 2 mins.
2.Add carrots, mushrooms, red bell pepper and cabbage.Stir fry over high heat .Mix it well.Pour in chicken broth.Simmer over medium heat for 1 minute, then add both noodles and soy sauce.
3. Simmer until almost all the liquids is absorbed and egg noodles are tender.Add the butter and mix it in until the noodles are evenly coated.

This post is dedicated to my mom.She is now in a beautiful place with God last June 2010. This is her specialty dish and we always look forward to it every special occasion and weekends.We love you mom and we miss you so much.
